In the year that the Salone del Gusto and Terra Madre merge to create a single event that can better communicate Slow Food’s message, the Taste Workshops will also reflect this change. They’ll be giving more space to the network’s key issues and campaigns: the importance of biodiversity and sustainability, the protection of the landscape and the rediscovery of traditional knowledge. As usual, they will feature tastings led by producers, chefs, winemakers, brewers and experts.
The Terra Madre communities will be participating with specialties from around the world: Algerian and Sicilian couscous, Indian spices, the little-known cuisine of Albania, versatile manioc, traditional Latin American recipes, natural wines from Greece and the Balkans and many other contributions from Italy and abroad.
Naturally, there will be plenty of wine, with France and Italy leading the way, but also Spain, Portugal, Slovenia, Germany, Austria, Greece, Georgia, Turkey, Serbia, Croatia, Australia and New Zealand. The winemakers will take center stage, in line with the philosophy of Slow Wine, the Slow Food Editore guide that puts the emphasis on production methods and place of origin as well as quality. Don’t miss the presentation of the 2013 edition of the guide, with over 1,000 Italian labels hosted in the stunning setting of the Lingotto ramp.
Some workshops are dedicated to classic and innovative beers, with Belgium and the city of Brussels as guests of honor, as well as artisanal cocktails and rare spirits. Others present the original nobility of some common ingredients, like vinegar, that have been corrupted by the food industry. And plenty more are focused on the best cheeses, whether from French affineurs or British cheesemakers.
